Honey Cranberry Gelato Recipe

Cranberries are a staple of the North American diet and certainly of the Thanksgiving meal. Personally, I love eating them anytime and in anything, from chutneys to sauces to relishes to just plain dried. This recipe combines the tart and tangy cranberry with the ceaminess of gelato. Honey is used as the main sweetener here, lending the gelato a delicate sweet flavor; however, granulated sugar may be substituted in the place of honey, especially if you wish to obtain a firmer dessert.  

Serves 6 – 8

1 cup heavy cream and 1 cup milk or 2 cups whole milk

2 cups cranberry sauce

1/2 cup honey (or sugar)

To prepare:

1. Mix the honey/sugar into the milk until well-blended.

2. Add the cranberry sauce and cream to the mixture and stir until combined.

3. Pour mixture into the gelato maker bowl and make the gelato according to the manufacturer instructions for sugar-containing mixtures. If using honey, it will probably be necessary to keep the gelato in the gelato maker bowl for an additional ½ hour for a firmer consistency dessert.

4. Scoop out the gelato and enjoy.
